Overstory, founded by Ryan Surrano, forest-farms shiitake and wine cap mushrooms and turns them into Biome Broth — functional foods made from forest-grown ingredients. Cultivating beneath the tree canopy keeps the forest standing and working.
Ryan, who studied plant science at SUNY Cobleskill, also helped develop Wally Farms' forest-health and carbon-sequestration plan, contributing to the farm's recognition as a Plant Sanctuary through the United Plant Savers Network.
